They're yew trees. When I was at Hampton Court Palace about 20 years ago, they were all pruned to a uniform shape. I can't tell whether they've been allowed to grow out, or are being pruned to diverse shapes.

I'm not certain -- some type of evergreen. The trunks look like they might actually be several tress that have been forced to grow together to create that huge crown.

And having gone to look at pictures of yew trees, a yew tree trunk has lots of "columns" that make it appear that it's several trees growing together, so I rescind my comment about these being trees forced to grow together. I think they're actually single trees.
